I loved dinner tonight! I baked turkey meatballs and served them with Dreamfields pasta.
Dreamfields has a 65% lower glycemic index, 5 grams of digestible carbs per serving. My friend makes this pasta for her family. It is a great choice if someone is trying to keep their sugar down. We tried it and loved it!
I made the pasta, added a no salt sauce and mixed in the turkey meatballs after they were baked.
I also served my meal on a small plate rather than a big dinner plate. We have become so accustomed to such large portions. I am definitely cutting down my portion sizes but having enough.
This is my turkey meatball recipe: I found this online, afrugalchick.com who got the original recipe from Southern Food on About.com
1 lb ground turkey ( I use 93% lean )
1/2 cup grated Parmesan cheese
1/2 soft fresh bread crumbs
1 large egg, lightly beaten
2 tsp dry leaf oregano and basil
2 tsp dried parsley flakes
1 tsp garlic powder
dash of salt and pepper
Heat oven to 375 degrees. Line a large baking sheet with nonstick foil or regular foil and nonstick spray. ( I use regular foil and nonstick spray ) Combine turkey meat, Parmesan cheese, breadcrumbs, egg, oregano, basil, parsley, garlic powder, salt and pepper in bowl. Stir or mix on low speed of a stand mixer with paddle attachment until blended. (Some use their hands to mix, I have used my hands and also just mixed with a spoon.) Shape into small meatballs, about 3/4 ounce each. Arrange the turkey meatballs on the baking sheet, Bake for 20-25 minutes, or until browned and cooked through. If you make larger meatballs, allow more time.
